One bad apple is not a metaphor

The saying is older than the science, which makes it slightly unfair that the saying turned out to be correct. One bad apple does in fact spoil the bunch, and it does it by emitting a gas.

The gas is ethylene, a plant hormone that triggers ripening. Fruit produces it, fruit responds to it, and the response is not subtle. UC Davis's postharvest researchers list the effects of ethylene exposure on sensitive produce as accelerated ripening and increased susceptibility to disease. Faster aging, then rot.

The numbers are ridiculous

Here is where it stops feeling like folk wisdom. UC Davis's commercial storage guidance says ethylene has to be kept below 1 part per million, and their ripening guidance is stricter still, warning that stored produce should be protected from concentrations above 0.1 ppm.

One part in ten million. That is not a quantity you can see, smell, or manage by intuition. Ethylene is colorless and odorless, so there is no version of this where you notice it happening. You just eventually notice the outcome and blame the lettuce for having a bad attitude.

Your crisper drawer is a small sealed room

UC Davis's researchers answered this exact question about home refrigerators, and the answer is about as direct as postharvest scientists get: the ethylene level in a home fridge depends on how many ethylene-producing fruits are in the crisper. They name apples, pears, and peaches.

So the drawer where you keep everything, apples on top of the greens, is a container that concentrates a ripening hormone around the things least equipped to handle it. UC Davis's compatibility work groups most of the very sensitive green vegetables together and explicitly separates ethylene-sensitive vegetables from the fruits that produce it. Commercial operations build separate rooms for this. You have one drawer and a lot of optimism.

Their cucumber guidance is blunter and worth quoting in spirit: don't store cucumbers with bananas, melons, or tomatoes. That is a short list of extremely common things to have in a fridge at the same time.

What to actually do about it

Split the fruit and the greens. Not into a system, just into two places. Fruit on the counter in a bowl where it can gas the open air instead of your spinach, greens in the drawer with the other vegetables. That's the whole intervention and it costs nothing.

Bananas get their own postcode. They're prolific, they're usually in the middle of ripening, and they're the item most likely to be sitting next to something delicate. Nobody's asking them to change, they should just do it over there.

And if a piece of fruit has actually turned, remove it that day rather than at the weekend. The saying is load-bearing. It's not spoiling the bunch out of spite, it's spoiling the bunch because a damaged fruit ramps up its output and everything around it is downwind.

The same trick, on purpose

The useful inversion: this mechanism works in your favor whenever you want something ripe. Ethylene is what drives ripening, so concentrating it around an underripe avocado, which is what the paper bag on the counter is actually doing, is the same chemistry pointed somewhere you want it.

One exception worth knowing, because it saves worrying about the biggest thing in the fridge. UC Davis notes that watermelon, at least in traditional varieties, isn't very susceptible to ethylene damage. The watermelon is fine. The watermelon has never been the problem.

Everything else, though: split the fruit from the greens, and take the bad one out today.
