ASPARAGUS · IN THE FRIDGE

4–7 days

Four days. UC Davis describes asparagus as very perishable — it respires fast, toughens quickly, and develops chilling injury after about ten days even at 0°C. There is no version of this vegetable that keeps for two weeks.

Stand the spears upright in an inch of water in the refrigerator, like cut flowers. It is the one storage trick here that changes the outcome rather than the feeling.

These are quality windows drawn from published UC Davis storage research — an estimate of how long produce stays good, not a safety date. If the package carries a printed use-by date, that date governs.

Near the end of the window?

Roast or grill it. Spears that have toughened lose that edge under high dry heat far better than they do steamed. The woody bottom inch was never going to be good and snapping it off costs nothing.

SOURCES

  1. UC Davis: asparagus sensitive to chilling injury after ~10 d at 0°C and toughens/respires fast; very perishable. Conservative home 4-7 d (stand in water). Haircut 1 d.

Ranges are as published. Treat the short end as your real window — grocery produce is already days past harvest, and a cooked dish starts its clock at the stove.

Pip, the Savery squirrel, looking unimpressed

Looking up your groceries one at a time is a hobby. A bad one.

Savery scans your grocery receipt and tracks these windows for everything you bought at once. The spinach, the strawberries, the milk you forgot about — all on one shelf.
